OK I understand that a slow speed grinder is best for working tools, but what would you use a high speed bench grinder for if it is too fast for plane irons etc…?

Tool steel
HI,
High speed (normal speed actually) grinders are for sharpening high speed steel (twist drill bits, metal lathe cutters) and other tool steels, although you do need to watch temperature on them. They are also useful for quickly grinding regular mild steel where you are not worried about temper. You can also use them on HSS wood lathe chisels if you are careful and cool the steel regularly.
And wood working tools
You can also use them on plane irons chisels, etc, if you are really careful about temperature. Slow speed is easier and safer, although not absolutely necessary. A good friable grinding wheel helps a lot. It stays sharper and helps cut cooler, although at the expense of wearing faster, kind of like a waterstone.
