I have 3 small shelfs 13/16″ thick and they have a bull nose across the front that I need to cut down to the same thickness as the shelf. the bull nose is 1-1/8 ” thick and is rounded. I need to cut just one side and round it over. What is a safe way to do this? The shelfs are 12″ long by 6″ deep.

I hope I understood this correctly. The bull nose is 1 1/8" thick. I assume the bull protrudes equally on the 13/16" main surface. This is what I will base my suggestion on.
Safe way? Hand plane off the excess. Take about 3 minutes. Then you can round it over to conform to the remaining bull left underneath with a round-over router bit, spoke-shave, slick plane or sanding ( I hate that word ). Depending on how much you want to round over.
You could take it off with a BS if you have 6" height capibility. But with the round side to the table would make it a little tricky. Still have some clean-up with a plane or sanding ( I hate that word ). ha..ha..
