I finally got some pics without all the glare so here they are.
I am too close to it and have been looking at it too often for too long.
I have what Joni Michel called ” the kind of crazy you get from too much choice “.
I thought I had the exact finish I was after. See the small “test” table with the cup and mouse. It is maloof. In the wood finish semi gloss, feels like wood to the touch.
While attempting to duplicate that finish on the “real” dining room table I have built it up to the point it is gloss and even deeper to view. Quite interesting until I touch it, then it is plasticy.
We will be very easy on the finish and not that obsessed with protection.
In the end, for bubinga, what do you find is the best way to go ?

Hey Roc, your table top looks good, although I also like the more (what I think is) satin finish on the sample. I'll bet a buffed down satin finish feels less plasticky, too.
I've never used Bubinga. But, I like building up the finish with clear (gloss) finish to get maximum depth, usually wet sanding with 600 grit between coats. Then, after the final coat is applied, I like to cut the gloss a hair by hand-rubbing with Rottenstone powder and parafine oil. But, I'm no finishing expert.
