The corners of a table, or the edges you might say (where the tabletop meets the vertical board edge at a right angle), get the most wear. But, they seem to build the least amount of finish. Are there any tips or tricks for building a protective finish on these sharp edges?

The main thing is to ensure before finishing that they are not so sharp. A small rounding can make a big difference.

Rounding over before staining + finishing is the best advice -
If there is finish on the table already - you can paint the edge with a thin clear epoxy glue.
Please test your skill with epoxy before working on the subject piece

I honestly don't think this should be a problem. Just be sure to get the finish on the entire piece. I'm sure Steve's idea is good also. I would not take the chance of doing anything else other than finsh.
