I've glued up walnut to turn a couple of salad bowls. 15" diameter, 6"deep, about 1/4" - 3/8" walls. I used Gorilla glue for waterproofing. They are holding up just fine.

Any quality woodworker's glue should do. I use titebond for most situations and titebond III for situations where the product might be exposed to moisture. Make sure all joints are well mated and clamped tight. Keep the grain running the same direction on all the pieces so they expand and contract together as humidity changes.
Glue is like a husband and wife.. You need to be REALLY close and 'SMOOTH' to make a good fit!
Will,
Is that why some get crusty, maybe even flaky as they get older?!
