Marquetry by Pierre Ramond cover oysters or also known as sausage veneers. Can't recall ever seeing a supplier for such a thing. People make their own by slicing tree limbs at various angles. Typically walnut and a few other select species are used. There was an article in FWW by Silas Kopf covering it about a year ago or so. You can do a search to find the issue.

While I can't offer any sources for oysterwood veneer...there is a species native to extreme southern Florida; Gymnanthes lucida, called "oysterwood" and it is an outstanding choice for this purpose. It is extremely fine textured and the transition between its dark brown heartwood and ivory white sapwood is exceptionally abrupt...which gives it a very striking end-grain figure.
Unfortunately, it is a rare species, but if you can find a source, you may want to consider it.
