We recently made a large table for indoor use from Eastern cedar. We would like to know what would be the best finishing product for that table ?

What a loaded question.
If you are going to use this as a dining table, conversion varnish would be a consideration. It would first be sealed with a catalyzed vinyl sealer. This is a very tough and durable coating but does require a spray application.
If you don't spray finishes you could find a local finisher to hire.
If you were to do a varnish finish, consider a couple of the hard varnishes like Behlen Rockhard or McCloskey Gym Seal. I would seal the wood prior to a varnish with a thin coat of shellac (Seal Coat).
The most simple is to use would be a very thin oil varnish such as Watco , Minwax Antique Oil etc. They will give the wood minimal protection and should be re applied periodically.
A step up from there is something like Waterlox brand. It's simple to apply and will offer more protection than the above finishes.
The last two will be more of a "natural " look that is close to the grain. The top two are film forming coatings.
