What is the best way or kit to use to inlay letters into my wood project? Not a sign making exercise, but actually route out the letters and inlay the letters.

The best way? Depends on how you define best. CNC would do it. Carving tools. Stringing cutter. Lasers.
I do not have a laser or CNC machine available.
Is the multi layer inlay system from Infinity a good way?
If you wanted to veneer the piece than you would take the veneer you want to use,lay out the letters ,saying or design you want,back it with a contrasting wood and use a scroll saw to carefully cut out your design.The back up material is your insert.Any book on intarcia would explain the process
