I’m installing cypress boards to the interior of a Bahamian cottage. I’d like to retain the natural color but am unsure what product(s) and process to use to insure that the wood does not darken and turn orange over time. Any suggestions appreciated.

A clear acrylic finish will go on water white and not yellow over time. Something like Minwax Polycrylic or General Finishes Polyacrylic.
I argue wholeheartedly with Howard's suggestion. I will however point out that even though the acyrlic may slow the change,and will contribute none of it's own, the wood will darken and become more amber over time. That's just the nature of wood. The change will be slow and shouldn't really detract from the overall appearance.
