Having sold my old shop, I am in the design phase for its replacement. I can’t see going the usual sheetrock route and am looking for a substitute for wall/ceiling sheathing. Any thoughts

I did a sheetrock ceiling with a partial drop ceiling for easy access / upgrades. For the walls I put in 3/4" T&G plywood over a layer of 1/2" homosote for sound dampening. I LOVE the plywood walls, you can hang anything anywhere and if you change it the old marks are of the "who cares" variety.
I would use drywall for the ceiling, and plywood for the walls.
In my shop with various remodels I have a mix of plywood and OSB. They are painted. You'll need a couple coats of primer on them before you paint.
I have opted for 1/2" plywood and french cleats glued every 6". This seemed like the best solution for someone that doesn't know what the final layout will be.
