I built a cherry table this summer and it has since irregularly faded on the top. I would like to finish it with waterlox sealer/finish but would like to minimize the irregular fading before I do that. Any advice?

Is the problem irregular fading, or irregular darkening? Cherry usually darkens first unless there is intense UV, where it like all woods will fade. I assume that the different shades on the top are not respectors of the boards in the glued up top, possibly lighter where something sat on the table for a while. A fresh sanding, probably not needing paper more coarse than about 180 grit. will even out the color.
It is always wise with cherry to be sure that items setting on the top are moved every few days it the beginning so that the coloring of the cherry is more uniform. Eventually, the shading would even out if the table received light uniformly for a long period. But, eventually, could be an uncomfortably long time.
