Hi
Just a quick question this morning. Is black walnut a suitable wood (toxicity) for a butcher block ?? A friend of mine want to use that and maple, I told him I’ll ask everyone here for your advice.

Bob, this topic has been covered several times here on Knots, but here is a quick summary:
Walnut contains a compound called juglone, which the tree produces as a natural herbicide...but it also has laxative properties, if ingested by humans or other animals. In addition, walnut also contains ellagic acid, a sedative and traquilizer.
When used in a cutting board, the exposure to the food is so brief that the chemistry of the wood doesn't represent a very high risk. Using walnut for stirring utensils or for the long term storage of food would pose a much greater risk. The problem is, some people (the rare few) have a very low tolerance for juglone, in the sense that they develop a potentially dangerous allergic reaction to it.
Maple is by far a more chemically friendly wood for use in food or toy related applications.
...So, the bottom line is; using walnut in a cutting board isn't the most dangerous thing you could do, but it isn't the best idea either.
