It’s a performance trade off somewhere since they’re less expensive.
Maybe the coating allows them to skip some milling or finishing for the cast iron. Cutting costs or maybe it allows them to store parts in a area that isn't climate controlled. Just theories.
Not necesserely a trade off, it’s likely black oxyde conversion finish such as found on fasteners and gears. Offers light rust protection, enough for indoor use and added lubricity, I say why not ?

I've had my lifetime fill of large jet tools, though I like the IBG8 grinders, or did before they went up from a discounted price of $260 early covid to $470 now...
....but I'd check the specs on these machines. I figured i'd compare a pair. The 20" planer, for example went from 92 carbide inserts to 68 with the black oxide version and the old weight was listed as 837 pounds and the new is 765.
Wonder if that's real pounds or just an updated shipping weight and the difference isn't really that big.
Wouldn't be surprised if the coating hides flaws that would have to be addressed or rejected as well as reduces complaints from people who get a machine and then find they let it rust and want jet to do something about it.
I haven't seen it in person yet. It looks like the kinds of coatings they have been using on semi auto pistols for quite some time.
