I have an 8inch Grizzly jointer. when I run a 6-8 inch board over it, it does not make an even cut across the board. The in and out feed tables are level and the fence is square. Doesn’t seem to do it when cleaning up narrower boards. Any ideas what could be causing this?

jointer problems
I suspect that the blade is higher at one end than the other , in other words the blade is not parallel with the infeed & out feed table heights. Or you have used the blade a lot on the first 1" or two near the fence and the other end has never been used so it is cutting more than the end next to the fence.
Next time you try the jointer on wider boards take some time and carefully examine the boards for twist or other warping. The wider the board the more likely these problems are to exist. You can flatten the boards, but you have to us finesse for the planer to remove wood from the right place on early passes.
