I have an old (50+ years) Walker-Turner Jointer and I can adjust both the infeed and outfeed tables. So when setting knives I don’t have to worry too much about “top-dead-center.”
Are adjustable outfeed tables non-standards nowadays?

Measure it with a micrometer, mark it with chalk, cut it with an ax.

I'm not aware of any jointers out there with an outfeed table that is not adjustable.
Also, trying to set jointer blades to top dead center is doing it the hard way, if you asked me. I use a dial caliper, and make sure that all 4 blades on my jointer are set exactly to each other. Then, I set the outfeed table to that height, and check it by running a perfectly jointed board in reverse about a 1/2 inch over the moving knives. When the feathering sound is oh so slight, I know I've got it. I always "zero" my caliper to the old knife setting before removing them, so I know I'm within .01 when I start.

For general interest Inca made or still make a jointer that has a fixed out feed table.
I had one of these and it was no disadvantage. Knife setting was easy as the head had jack screws.
I like your words on the "feathering sound"- very apt.
