Hello,
I would look into some of the available salad bowl finishes that wood turners use. I've heard that mineral oil works well, but have no first hand knowledge.

Behlens Salad bowel finish is good from Garrett Wade and "Mystery Oil" from Boos Block Co is also good. Mystery Oil is actually Livos, a plant based oil made in Europe and lately unavailable in the US except as the afore mentioned "Mystery Oil". Aloha, mike

I used Muralo gloss ceramithane on a maple butcherblock counter that I made, and it is holding up beautifully. Be sure to finish on all sides.

If there is not a dealer close to you, then Highland Hardware will ship it to you, beware it is not cheap at $44. p/gallon, but it is undoubtably for me the best waterbourne finish I've used.
