On the Klingspor website there is a dizzying arraying of different sandpapers. I am looking for sheets or sandpaper, to be used for hand sanding in places my RAS cannot reach. Occasionally I will be sanding off shellac or other finishes, including paint. There are so many variables (type of paper, paper weight, coated/uncoated, different abrasives) that I do not know what is the most suitable sandpaper for what I described above. is there any consensus as to what their best all around woodworking sandpaper would be?

For hand sanding, which I do a lot of on the lathe, I find this 3M product works best. It has excellent life, a flexible back, and the backing is a bit tacky which makes it comfortable to control, especially if you fold it. The back when folded together will grip each other and not slide around in use.
Lowes carries it here which makes it convenient to pick up.
I know of no comparable product from Klingspor.
Here in Ashevllle NC, I frequently use the local Kingspoor shop, and have found their advice spot-on regarding abrasives. I’d simply call them, where you can have an easy interactive conversation.

For hand sanding I like garnet. It cuts so much better. But I wouldn't use it to strip finish, in a power sander, or at the lathe.
I love the “What Klingspor sandpaper type do I use!” question, and the answer is “Here’s the 3M I use.” :-) Not sure if you’ve come across this yet, but it offers some advice about various Klingspor types of sandpaper and recommendations on what types to use for certain operations. It’s not a complete answer, but the Tips section is useful. http://valleywoodworkers.org/wp2/wp-content/uploads/2017/07/Abrasives-A-to-Z-V3.pdf
There’s also their FAQ page. https://www.woodworkingshop.com/faq/
