I am doing a conference table out of figured sycamore veneer core with a maple solid edging. The maple has a knife edge profile on it. Any ideas what the best way to approach this is? Each side of the table is 4 x 7.

I've been delinquent from the forums for a few weeks so I apologize for the delayed response. Perhaps this reply will come in time for your project.
By knife edge I presume you mean it's beveled on the underside. If that's the case, my first thought is to cut the edging from a wide board, by first cutting the beveled edge, then ripping the straight edge to glue to the solid-core veneer section. Use off cuts of the opposing angle as clamping blocks.
