I want to build a spray booth easy to disassemble and store. A back probably made of plywood to house the fan. Sides of styrofoam and probably a plastic sheet to drape over the top and open end. What kind of fan do I need, and where can i purchase one?

I don't think you are going to want any plastic sheet as part of your spray booth. Anything you are spraying will stick to it only long enough for you to get almost done with the final coat before falling in flakes all over your wet project and ruining it.
Nor do I think styrofoam is a good material since many solvents instantly dissolve it.
Cardboard and duct tape, or 1/8" plywood and duct tape are cheap and easy to build a booth with. Michael Dresdner's new finishing book has great designs for cardboard booths, rotary tables etc. In addition, it's a terrific book for all aspects of finishing. I believe at $20 it is probably the cheapest, most enjoyable educational experience I've ever had.

Don't know if this would be applicable to a knock-down booth, but a guy in San Luis Obispo who is a wood artist built a spray booth at the side of his garage and exhausted it with a used furnace fan. Worked great.

He does a little. One of the things I've typically liked about Dresdner is something of a no baloney approach. You won't see any explosion proof fans in the pics. He filters the air before it leaves the booth and the air is all getting moved by $20 Target fans. Same stuff the rest of us poor old B**tards use.
