Preparing to build kitchen cabinets with knotty alder frames and shaker doors, drawers, and panels. Wondering if knotty plywood will produce a similar look of hardwood panels? I realize may not be the same product, but wondered if substantial difference.

It might work.
It can be very hard to find veneered product that matches solid wood. If there is to be a stain applied though that can really even things out.
I've never used Alder so can't speak to how it will look - usual recommendation to make a test piece applies.
Two things:
1) If the plywood is rotary cut (most is), it won't look anything like solid wood panels.
2) again, if rotary cut, it won't finish at all like solid wood, esp. if you are putting on a stain. The rotary cutting fractures the wood, which changes its properties.
If the veneer is flitch cut, it will look like a number of flat boards. This will be much closer to the look of solid wood panels, but may still finish a bit differently.
I've built two complete kitchens using knotty alder. Used 1/4" mdf with paper back veneers for the panels frnt & back to reduce movement would of used 1/4" plywood but was very hard to source and the freight was crazy expensive. Built two prototype doors using knotty alder lumber for the doors stile and rails,left them alone while building carcasses and face frames, about a week latter both had significant twists. Unsuasable. Built two more prototypes using clearer stock (only pin knots). Stayed dead flat. Had the customers come over and have a look. They actual prefered the knotty panel with the clear frames.
