To some extent, it will depend on the design of the light fixtures. If they spread the light over a wide pattern, then placement might not matter very much. If they are tight-pattern directional lights, then you'll need more of them, and need to be quite picky about placement.
Dan: Towards the front as much as you can place so you can get light on the displayed items.
