Gary Katz over at JLC mentioned a book on mouldings. I cant recall the name but from what he has stated its the cats meow of mouldings. It was pricey, around 100 dollars.
Another option would be check with your woodworking mill shop they should have a listing of the profiles they produce. And the better ones would have a showroom of the profiles.
Remember mouldings have a few basic features, the possiblilities are endless with the varied profiles.
Are you looking for Craftsman style? If so check the book "Craftsman Homes" by Gustav Stickley. If you can wait for a couple of months, there is a new book coming out with detailed examples of "Craftsman" trim.

Go to a Borders or a Barnes and Noble bookstore. Get copies of "The Not So Big House" and "Creating the Not So Big House." Take a sketchpad with you and find a comfortable chair. You will see dozens of ideas from architect-designed houses laden with good interior (and exterior) trim schemes. Take notes and do sketches.
Craftsman is easy in concept, but wood-intensive, and requires, I believe, more attention to good joinery than blah blah molded mitered trim. It is a good idea to have these things on site when trimming out: planer, jointer, 3 hp table-mounted router, and biscuit joiner.
Good luck.
