Hi — I’m completing a piece that has 20 or so mortise and tenon joints. Unfortunately, I messed up a few of them and they are fairly loose, I would say maybe 1/32nd of gap — maybe a 1/16, though i really don’t think they’re that bad… anyway, i really don’t want to refabricate those pieces… if i used a good gap-filling epoxy.. or even a type 1 pva glue — would would happen? many thanks.

Loose joints
That's too loose.
Glue some thin strips of wood onto the tenon to fatten it up and refit the joint.

Search the Internet for a general article on glues and gluing. The ones I've read said almost no glue has strength in a gap. Even with a glue strong in a gap, an open joint will not position the members exactly where you intended. As Pete suggested, add some pieces of raw veneer as needed, sand/plane/rasp until the joint is friction tight, then glue.
