I was abit overzealous in trimming down a tendon for a joint and now have loose tenon and mortise joint. Any suggestions as to how to tighten it up? Should I cut a thin shim and glue it to the side of the tendon before inserting the tendon in the mortise?

You could try a piece of veneer, unless your tenon is really slim!

You have several options for fixing mucked up tenons:
1) Glue a thin shim onto the tenon to snug it up. Pros: can be quick and effective. Cons: It may be difficult, if not impossible, to get a shim that will fit exactly right.
2) Glue a thick shim onto one or both (depending on how poorly the tenon is cut) sides of the tenon. Recut or re-plane it to the proper dimension. Pros: You essentially get another shot at sizing the tenon properly. Cons: It takes a bit longer.
3) Cut off the tenon and re-do the joint as a slip tenon joint. Pros: You can correct pretty much any problem with the tenon, no matter how bad. I often use this method to repair broken tenon joints. Cons: Takes longer still, and you need to cut another mortise where the tenon was originally.
There are probably more, but this is what I have in my bag of tricks.

PS: As for mucked up tendons, that's out of my realm of experience. You'll need a doc for that! ;-)
