I’m planning on building kitchen cabinets from mesquite. Sourcing the dimensional lumber for the frames, doors and drawer fronts is not an issue. Mesquite plywood for the cabinets themselves seems to be non existant. I realize that interiors need not be the same species but I do have ends on a couple of bases as well as an upper I need to match. If it’s not cost prohibitive I’d like to use a hardwood plywood that at least matches the grain of mesquite, color would be the icing on the cake but I can stain to match if need be.

Mesquite ply is available from many sources - specialty supploiers will simply veneer a sheet for a few hundred $$$.
If you are able to veneer it yourself you'd be better off just ordering the veneer (just google it and a dozen suppliers will pop up).
If you've never veneered anything but want to give it a try it's not that difficult for small flat areas.
