Hi!
I just finished an entrance way with Cherry wainscoating using tongue oil and love it. I dont like oil based polyurethane and intend to use a water based poly after allowing it to dry for a few weeks. Am I correct? Also , can I add anything to the pure tung oil,(diluted 25% with thinner)to match the color for use on a pine door and poplar door casing? Any suggestions?

If you don't use the 25% thinner, you can add Transtints dye to the oil. If you do use the thinner, you can add some oil-base stain to the oil for coloring.
Minwax, Benjamin Moore, and other stains use oil-base dye and pigment in the stain (the lighter colors don't have pigments). You can let the pigment settle to the bottom of the can then dip off some of the stain from the top of the can - that way you get mostly dye.
Or you could just use a colored danish oil like Watco. You may have to blend colors for a match.
Once the oil has cured, you can topcoat with a waterborn finish. A simpler method is to use a varnish that has the color of danish oil. Varnish is very durable and is often used for architectural woodwork (polyurethane is a type of varnish). Waterlox original varnish is one brand that has the coloring that danish oil provides and the durability as well.
