I’m going to be cutting some 1/2″ mortises in African Mahogany, and I’m wondering what bevel angle to put on my chisel. I have a Sorby mortise chisel with a 30 degree bevel, but some opinions have it that 35 degrees is better.
Any opinions on the matter?

I would think that 30degrees is just fine- Af Mahogany is not too hard.

I'm not a tool guy so much, but 30 degrees is pretty normal. All of my chisels and plane irons are ground to 25 degrees with a 30 degree microbevel. It seems to work well for just about everything, and makes them easy to rehone.
It's sort of a toss up. If you grind too sharp of an angle, the chisel will be easier to drive into the wood, but you will continually break the edge off the chisel. If the angle is too steep, it is hard to drive.
