I need to apply a finish to walnut kitchen cabinets that I built. I have a household of 7 with very active kids. Most important feature of the finish needs to be durability, suggestions?

Most durable would be a precat lacquer, but they almost always need to be sprayed. After that, I would go with poly. Oil based will darken the wood. Water based will leave it the same color it is now.
EM7000HBL + cross linker. Target Coatings.
Waterlox Original or Satin. Waterlox Crystal Clear Urethane. I use on these all on Kitchen after Kitchen. Very easy to use
Enduro Var pretty much has he best properties you are looking for, the conversion version is at the top but the water based single component is a close second and from experience, my stairway is mahogany finished with enduro single component and it’s tough enough. https://generalfinishes.com/compare-all-topcoats
