I am building a small (very small, 24″x18″) bathroom vanity that will have a granite top and vessel style sink. Its a shaker style with frame and panel sides. I was thinking of using a veneer of some type in the panels but I need some ideas for a nice compliment to the cherry.

With the granite, and the drama of a vessel sink, why do you need a complement for the cherry? Shaker style is simple. Perhaps some hand carved walnut puts or other small touch would be enough.
contrasts
I'm with Steve - I'd leave the cherry plain. If anything, pulls/knobs with the same granite might provide a little contrast or accent. I'd avoid anything that would draw too much attention away from the counter top and sink.
Said with enthusiasm
How about this for a compliment: "My what lovely wood. Such a deep rich color!"
Veneer can provide lots of options
Here would be my choices:
Curly Cherry
Cherry Burl
Ebony -I think nearly jet black ebony contrasts really nicely with cherry.
I built a cabinet a while back in which I veneered the mahogany panels with a mahogany burl, leaving the burl in the center and the perimeter the "plain" mahogany. I still get nice comments from people who see it for the first time.
I love cherry! I'm finishing up a couple wine cabinets now and I'm going to have a veneered panel in the top and to show off the figured cherry, I'm putting in a burl. I'm considering ambonya, camphor, walnut. Now if it were the front of a single door a nice crotch would be lovely either walnut or cherry. You don't mention how you intend to finish the cherry. Is it to be a light finish or are you going to color it dark to simulate that natural aged cherry look. Be sure and post the pic's
Wood that compliments cherry.
I've used Wenge to accent cherry many times, but only as strings and inlays. I think it's a great look especially when the cherry darkens.
Sounds like the vessel will be the primary focal point, set off by the granite top. Cherry vanity will be a third element of the overall design. Would contrasting panels add to many elements to the overall design? Just my two cents.
give it the eye!!
birds eye maple for a center panel would look nice, as the two woods age I think they would compliment
one another.
