Seems i bought an OLD plough plane awhile back, and have been bringing it back to life. The seller(s) at some time or other, applied a thick, slapped on coat of Varnish to everything on the plane’s surface, metal and all that old Beech. Been stripping the junk off as I go, but this will need a decent “plane” finish, sometime.
Thinking, maybe, BLO/Wax, or BLO/Varnish? Wipe on, or brushed?

I would skip the BLO - beech is very white - a dye stain is an option for color if you want color - then
Seal with shellac, thinned varnish wiped on, wax.

Google "finish on old wooden planes". You will find a number of submissions.
One of the most common finishes was "no finish". But, an oil or oil varnish mixture is used by some. There are cautions about not applying finish on some components or the adjusting mechanism will slip
