So I took to carpet off of the landing and stairs and replaced it with hardwood. Everything came out better than I hoped. Now I have this drywall newel post that just doesn’t fit. I would like to build a new box newel post around it out of matching red oak.
My biggest issue is what I will uncover and how do I do a full wrap with the way the handrail and the base all fit together? Any advice would be helpful!

You have to go for it. Make clean vertical cuts at the bottom and peel the drywall off the post. This will tell you what you are dealing with. My guess is you'll be able to build it in place starting with the back where the handrail lands and the wrapping the structure. It is probably just a couple of 2-bys or a 4x4.
Send more pics once you have it open. Should be a fun project!
Will do! Drywall is not my specialty so I will be going nice & slow with it.
