We have added a 3 season porch to my Mothers cabin. The walls are sheets (4 x 8) of pine board paneling. The paneling has 3 inch grooved out decorative pattern. The ceiling tongue and groove knotty pine. What should we use to finish both the walls and ceiling? We have tried polyurethane sealer, shellac, varnish, and various stains. The poly, shellac , and varnish turns it a funny yellow color. Stains look very mottled and uneven. The pine wall board is very rough, and pourous. It soaks up everything! Please help! We would appreciate any and all advise!
Thanks for your help, it is appreciated!

You need to pre-condition to prevent the splotching. Take one of your sample boards and try a thin coat of 1-pound shellac. Let it dry, and then apply your stain. To learn more about shellac, see:

NOTE: If you want to avoid color changes, you'll need to use a pale shellac. Look here:

You'd need to investigate whether to use a dewaxed shellac or if it's not necessary.
