Has anyone ever tried to use glued up oak boards for a vanity top in A bathroom? I am wondering if this will be durable enough. It will of course be finished with stain and poly(very thick poly).

Personally, I would say no. There is too much moisture and oak is too hard to seal completely as has been my experiences. I would look for something else more stain and moisture resistant if I were you.
I can't offer much advise RE: your question but I've got a similar project in the design phase:
Salvaged a bunch of clear heart, straight grained redwood from an old exterior hot tub years ago. Chlorine from the hot tub has permeated about halfway into the thickness of the material - you can smell it when you mill the stuff.
I'm thinking of building a vanity top, segmenting up a big bowl blank to be turned for the lav and building the whole thing out of this readwood.
The *real* woodworkers on custom house projects where I work advise using a polyurethane or an epoxy finish rather than living directly "on the wood. I'm considering using either Polyurethane (Gorilla) or two part waterproof Resorcinol glue for the fabrication.
Any advice on finish system(s) or glue would be welcome. No, don't try to talk me out of it! (grin)

' No-one' offers sage advice, but I would go for it with splines and bread board edges. They have that new stuff that is a two part application for bar tops at woodcrafters...very thick...seal both sides. I figure nothing lasts forever....
