I inherited a big, old wooden table. I’ve tried enlivening it with Murphy’s Oil Soap. I think it’s working, but I’m unsure. I could at least use feedback.
I’ve used the product as instructed — wet cloth, oil, rub. In the test spots, it’s rolled years of varnishes and cleaning products into long, fat pills. Which seems right (the gunk is coming off!). But here’s the thing: it won’t stop coming off. Like worms on a rainy day, they pills are everywhere.
Is this a sign of simply more gunk than I might have anticipated? Should I just keep going?

Seeing as you're in pretty deep already just stay the course and get off what will come off with what you are using. Once that's over you can clean the surface of the Murphy's and see where you stand.
You should continue this project the same way you potty train a little kid. Keep wiping till it's clean.

Prospect83, Murphys Oil Soap, is just soap. Its made from oil, like all soaps, but it has no properties of finish restoration or stripping, other than cleaning. I use it to clean furniture as well, because its mild, but I dont think its chemically significantly different than dishwashing liquid.
Murphy's is vegetable oil based. Dishwashing liquid is animal oil based. You can finish up with Murphy's then clean with the dish soap to remove what is left of the gunk? I would try mineral spirits or sometimes called paint thinner to pick up any left over residue.
