I am a newbie, I just finisehed a workbench that I found the plans for in a Best of Fine Woodwroking magazine. The plans call for a Danish oil finish on the workbench. My question is do you recommend a polyeurethane over top of the oil or as is.

Personally, I would skip the urethane. That way if you are impacting the bench with chisels, hammers etc. you don't have to worry about chipping the finish.
Also, if you want to add more oil at any point, simply clean the surface, and apply some more oil.
It's one of those very simple finishes to do.
