I’m trying to separate dowel pins, tongue and groove, plus mortise and tenon joints from 4 chairs I recently obtained. The joints probable failed due to the glue being old and individuals sitting on them couldn’t keep all four legs on the floor which caused stress on the joints. My question is when I have the joinery separated what process or method could I use to remove the old glue from the wood without sanding as that wiil reduce the size of the tenons or dowel pins?

If the glue is hide glue, steam or hot water will soften it enough to get the joints apart.
There is no need to scrape all the old glue away, as a new application of hot hide glue will melt the old glue and it all will bond together.
