I am making a cherry table. Top is sanded to 600 with an orbital and 800 by hand. I started with a light coat of pure tung oil let it dry two days then applied a first coat of minwax wipe on poly. It was a pretty old can about half full but dried ok on my sample boards. It seems to be taking a bit longer to dry now, if it doesn’t what would you suggest? I bought a new can for the rest of the coats.

Not sure where to start with this one. Tung oil doesn't dry it cures. sometimes it cures for up to 30 days. It was used to seal ships for thousands (literally thousands) of years because of the way it soaks into the wood and gives a durable, water proof finish. Was it 100% pure Tung oil thinned down? Or did you mean it went straight from the bottle to the wood?
About the poly. How old is pretty old? Did it have any kind of skin over it when you opened the can? After opening, the shelf life of most finishing products is about 2 months unless they are protected with Bloxygen or something similar. Was it water or oil based?
I am also a little concerned about the sanding to 600 then 800. That doesn't leave very large "pores" for the Tung oil to soak into.
So, I think your answer is "multiple factors of causation". Over sanded wood that prevents the Tung oil from soaking and properly curing covered by poly that has aged out equals a mess. I think you need to strip it off and restart the finishing process. Sand to 320, 3 coats Tung oil thinned 50:50 with mineral spirits, let cure for weeks - not days then apply quality Poly if you feel you need to.
