The thicker slabs will be used more as mantel pieces. They might be able to appear more rustic and I have even thought of just leaving the cracks

Fill these, too?
I'd fill the cracks, even if you leave "rustic" edges. Otherwise, the cracks will be a housekeeping problem, collecting dust, dead insects, etc.
Depends on what other hobbies you may have.
