Got my door fitted and hinges started, overall going pretty good. My question is, there is a bit of “spring” when I close it, I’m concerned my catch might not hold it. ? Thoughts on what I did wrong and tips for correcting it. Thanks in advance.

Hinges could be mortised a bit too deep (or hinges did that even before installation?). Paper, tape or a piece of ald gift card makes a nice shim and should remain hidden if this is indeed the culprit.
Probably needs shims on the hinges, as above. Or if it's not finished, a couple of passes with a hand plane will do the same as hinge shimming.
As a general rule the hinge side of the door can be cut to about a 2 degree bevel which will take care of the spring you are getting in the door. Since you have already been fitting the door you may still be able to cut the bevel if you only take off a little bit of wood, perhaps carefully with a hand plane beveled to the inside of the door. The other thing you can do is cut a hinge piece to glue against the case side just maybe a 1/4 inch or so and then cut the bevel on the hinge side of the door to 2 degrees. The added hinge piece will take up some of the amount taken off of the door already and will let you inset the door a bit to get a nice shadow line.
Most likely the hinges are binding.

Mike, in your question you say you got the "hinges started" so I am assuming that means one screw in each side of the hinges as shown in your video. Is it possible the hinge faces are not perfectly flat or slightly cupped up on the sides? If you haven't already tried with all the hinge screws installed then that is where I would start.
Got it worked out, Thanks ! next time I will try the bevel on the hinge side, to be clear, I would bevel the edge 2 degree, then cut the mortise ?
yes cut the bevel first then the hinge and then fit the door.
