If you're logged in and you go to your profile, it should say 'edit profile' at the top. Click on that and you can change it to suit.
Go to "My Forums" (under the right end of the orange banner up top), then go to "My Profile."
As to being logged in, you can no longer browse Knots without being logged in. Being a "guest" ceased to be an option awhile back (before New Knots was born).
