I am going to be building a shelf with doors and a bathroom vanity from clear white pine 4/4 and maple or birch legs and some trim 8/4. It will be kept in the bathroom, but we are in southern california so the window remains open most of the time, himidity won’t be terrible. I was wondering what finish to use on top of the stain. I was thinking about a wiping varnish or a standard Cabot Spar Varnish finish over the stain. I just don’t have a lot of experience in this area so I could use some suggestions.

A wiping varnish, such as Waterlox Original/Sealer works well for bath vanities. Or, for a lighter look, thinning a varnish such as Pratt & Lambert 38, wood also work as a wiping varnish.
Let me digress about your choice of woods. Pine and maple or birch are very difficult woods to stain, and even more difficult to take stain in the same way when next to each other. I'm not sure how you are contructing this cabinetry but it may be there are alternatives that will be easier to finish and to construct.
