Hickory- Like many other species is prone to tearout so you have to be especially careful about reading the grain correctly. If you are working a face you need to be reading the adjacent edge to see how the grain is sloping. Keep track of each board as you are working it (I make an arrow on each face oriented so that the cutting edge of whatever tool I am using-jointer, planer or handplane- goes into the point of the arrow).
As always, sharp (really sharp!) tools and a light cut will give the best results.
