I put 1×2 beveled oak trim on a granite edge but in one area its 1/8 too high so I need to cut it down to the level of the granite surface. I’m thinking I can place a peice of .06 metal on the granite to rest the bottom edge of my hand-planer, then set the blade depth to 1/16 and carefully plane the oak so the blade doesn’t hit the granite.
Any other ideas which don’t make me laugh?

Are you talking power planer? why not use a hand plane? and a strip of duct tape. If they don't find you hansome they should find you handy.
You could use a router and a flush-trim bit. The router body will be horizontal, and the ball bearing at the tip of the bit bears on the granite.
Use a hand plane and go slowly. I've planed trim adjacent to plastic laminates and been successful. The granite may dull your iron, but most likely the granite won't be damaged. You may get some practice sharpening!

I think the router trim bit with bearing guide is the most effecient way to go if you have a lot of wood to trim down. But for just one piece, a quicker way would be just use a block plane to get it down to as close as you dare, then finish with a cabinet scraper (card scraper). If your trim is 3/4" wide, you can use your finger as a guide: just let your right index finger or middle finger extend down below the scraper so the finger rides against the outside edge of the wood, so only 3/4" of the scraper edge is cutting. Sort of like using your finger as a fence. GP
If you don't have a diamond tip blade.. not to worry. Granite is harder than steel.
