I have seen pictures of old hand saws that were able to start a cut in the middle of a board, which I have labled “plunge cut” for lack of a more accurate word. Anyone have any information? Are there any manufactured currently?

try a Japanese saw
Many of the back-cutting Japanese handsaws have a 'tooth' at the leading edge tyhat allows you to start a cut in the middle of a boaard - or anywhere for that matter.
I have 2 and have done just that about 3 times in the last month.
On forward cutting saws I have no knowledge about starting a cut you describe.
