I went looking for plywood today for some cabinets. Some 3/4″ plywood had 5 “plys”, some had 7 and some had 11. Is there any reason to choose one over the others?

Usually 7 ply is fairly standard for 3/4" cabinet grade materials . There is some imports available that have many thin ply's . The quality of the core is more important than the quantity of ply's imo . For example I use Apple ply for much of my drawer boxes it is 9 ply 1/2" and there is little room for any voids with all those ply's .
