I do not have any large clamps and currently do not have in the budget money to buy any, so I was wondering if it would be possible to use pocket screws in combo with glue to secure the squared 2×4’s that I am going to use for the top. I plan on using douglass fir for the top. Does this sound feasible or are the pocket screws going to be shredded out with planing force?

There must be a lot of ways to clamp something up without having "clamps" but using things you have sitting around and utilizing gravity and simple machines:
- rope
- weights
- car jacks
- wood braces
- scrap wood and wedges
- threaded rods
- eccentric wheels
The other option is to use an adhesive that does not require a lot of clamping pressure. Squeezing the p1ss out of a glue joint is usually not necessary. Hide glue and yellow glue have a lot of initial tack, and epoxy does not need (or should not have) extreme clamping pressure.

it sounds like you are basically just using the screws to draw the pieces together while the glue dries...so they are just provideing mechanical fastening in addition to the glue...they become irrelevant once the glue dries...make sure they are not somewhere you are going to hit them when surfacing your bench or drilling dog holes....
