I’m just putting this out there, looking for opinions on using Poplar, flat sawn for some doors for my kids house? They would be 6 panel style, maybe using some pine for the panels and Poplar for the rails Stiles. They would be sealed and painted. I’m wondering about stability and durability, versus Pine all the way through.

I love poplar, and it is great for paint grade work. You say flat sawn... for doors I'd avoid "full grinning" end grain boards. Rifty is good, smiling is risky.
Poplar is fine. A very stabile choice and even more so if you use rift sawn as MJ suggested. Resist the urge to make the door 1-3/8, go full 1-3/4" thickness.
