In my dotage ,I am 80,it has been suggested I stop making Furniture and do more carving.I saw a video of Mary May where she used a portable carving bench. As I spend a few months away from my shop and the said bench allows working when standing, this is ideal. The multi hundred dollar benches for sale are simple and i could easily make one.ThereĀ are however options that I wold consider not available commercially;adjustable height ,double screw vice, dog holes of course, flat base of adjustable mechanism with rubber bottom.
Anyone make or buy one of these? Any additional suggestions ?

Not sure how close this will come to what you're looking for, but I was immediately reminded of the Milkman's Workbench I read about some time back. Here's a link to some photos and descriptions from when Chris Schwarz was still spilling photons onto the internet under the Popular Woodworking banner:
https://www.popularwoodworking.com/woodworking-blogs/the-milkmans-workbench-want/
I was also reminded of the Sjoberg Smart Workstation. Here's the company's own link to it:
https://sjobergs.se/en/product/sjobergs-smart-workstation-pro-33309/
The Sjoberg workstation bench is available from Woodcraft, Rockler, Amazon, and others, I believe.
This one comes up in a FWW website search and always looked interesting to me: https://www.finewoodworking.com/membership/pdf/6542/011056058.pdf
Then there's Dave Fisher's bowl carving bench and the spoon mule:
