I have a holly tree that will soon need to be cut down. It’s trunk is up to twelve inches in diameter. I would like to save some of the wood. I understand that holly has a tendency to turn grey. How can I keep this from happening.

Are you looking at turning blanks or lumber? I am not 100% certain, and someone else with expierince can tell for sure, but PEG3000 MIGHT work. If using for turning that would be a good first step anyway.
TAke a look at this page for some help. Holly is used for items such as white chess pieces and white inlay and marquetry, so if dried properly, it (the heartwood anyway) should be and stay white. Note that the article says it's best cut in the winter.
I envyyou such a large tree! We have several in our yard, but the largest diameter is probably 4" or 5".

Cutting in cool weather if you are drying it yourself. If you have a sawer who will kiln dry it for you shortly after the tree is taken down is good also.
Almost all of the white woods have poor resistance to decay. Blue stain is just incipient rot. Whenever you saw it, get it stacked and stickered ASAP. Make sure there is good air-flow through the stack.
