I built a small table of birch plywood with 3/4″ X 3/4 oak edging for my daughter. I would like to know what the quickest solution is for finishing it so that the wood is protected from juice spills, etc. I don’t want to have to do too many applications as I have a time limit as to when I need this done by. I’m not looking for anything fancy just something durable and quick…Thanks…

get minwax wipe-on polyurethane at home depot. It dries quickly...quite durable...a few coats will be fine. easy to use.
Buzzsaw,
Look at the thread above "cherry bar top."

Alan,
I'm confused. The thread above the 'Cherry Bar Top' talks about boiled linseed oil. Are you suggesting this? I'm confused...Regards,

Buzzsaw,
Oil? Certainly not! I am suggesting bar top varnish. (Perhaps you read the cherry bar thread before bar top varnish was mentioned.)
To repeat myself: bar top varnish is very tough and hard. It's formulated for exactly your purpose (and for bar tops...duhhh). It has a beautiful amber tone, and can be rubbed out to any gloss you might desire.
Stay away from spar varnishes and exterior varnishes. They are made to remain soft so they won't crack when the wood underneath moves with seasonal changes. They resist scratches practically not at all, and even fully cured you can peel them up with a fingernail.
